There are three Prosecco grapes one of which is the dominant grape used to make this Italian style sparkling wine.
Col Fondo translates to “with the bottom”  and summarises the way the wine is made.
A secondary fermentation occurs in the bottle but the lees (sediment) are not disgorged.
This means that the wine holds flavour and mouth feel from the lees. It may have some fine sediment and even be a little cloudy. Do not expect the high effervescence of a Champagne. This wine is more frizzante i.e. light sparkling.

This delicious Margaret River Chardonnay underwent malolactic fermentation and spent 8 months maturing in oak pre-bottling. French barriques were used with 20% new barrels and the remainder 1-5 years old.
This is a dry, full-bodied Chardonnay with only 1.62g/L of residual sugar.
It is drinking beautifully now and will cellar until 2024/2025.
A palate of green apple, white pear and subtle oak nuances makes this a very easy drinking Chardonnay for any occasion with or without food.

Rias Baixis in Galicia is situated in the very North West of Spain, the strip of Spain that sits on top of Portugal (geographically).
This slightly aromatic wine is a fabulous match for delicate white fish.
White pear mixes with a touch of tropical fruit. The fine acidity combines with a soft creaminess to make this a very easy drinking wine. Best served cold.
Note: Some 2017 may still be hanging around. The 2017 is just as enjoyable as the 2018.

Composed of 12 hectares of albariño vines surrounding an historic property which dates from 1511, Pazo Barrantes location in the Salnés valley places it in the birthplace of the whites from Rías Baixas. This is the subregion with the most Atlantic influence that is present in the albariño grape cultivated in this vineyard.

The Salasso rosé is a blend of hand-picked shiraz and pinot noir grapes.
The fruit was whole bunch pressed and fermentation commenced spontaneously with ambient yeasts in old French oak barriques. Once dry, the wine was left sur lie (on the lees) for several months prior to bottling. The wine was bottled without fining and with minimal filtration.The result is a note-worthy rosé expressing soft red berry flavours and a touch of creaminess. A beautiful cool drink for a warm summer’s day.
Be warned, this is a gem of a Rosé. We expect the 2019 to sell out quickly but don’t worry, winemaker Glen Hayley will ensure that the 2020 is just as good.

Palo Cortado is a near mystical wine. It starts life as a Fino Sherry where “Biological aging” occurs under a veil or film of yeast called the Flor.

At some point the winemaker identifies that the wine has some special characteristics and the barrels are removed from the Fino solera system and allowed to age “oxidatively” without flor in a separate solera system.

The single chalk mark on the Fino barrel receives a stroke (cortado) through it from the winemaker signalling that the wine is no longer a Fino.
The rules from the Consejo Regulador state that Palo Cortado should have the aromatic charateristic of an Amontillado and the structure and body of an Oloroso.
The average age of this Palo Cortado is 20 years. It is aged in American Oak Butts (Barrels) and only 33 litres are drawn each year from each of the 500 litre butts in the bottom row of the solero.

This wine will have your taste buds in a frenzy. A combination of nutty tastes with a saline background and a fresh full mouth feel of cedar wood and cream result in an extremely complex long-lasting palate.

Palo Cortado is expensive because it is rare, long-aging and complex. This is a wine for special occasions and sharing with special friends. Your goal is to have lots of special occasions with just a few special friends.

Sherry
The main styles/types of Sherry are – Fino; Manzanilla; Amontillado; Palo Cortado; Oloroso; Pedro Ximenez; and Moscatel. In addition there is Medium Sherry; Pale Cream Sherry and Cream Sherry.

Brouilly is one of the 10 Crus of Beaujolais. The Crus are considered the best wines of Beaujolais.
For this wine, the grapes were destemmed and then vinified in concrete vats.
Maceration (resting the wine on the skins and seeds) lasted for 16-22 days followed by 7 months in large 50hL barrels. The wine has a dark garnet colour and a delicate nose dominated by red cherry.
The palate has soft powdery tannins and delivers red cherry and spice flavours, mainly cinnamon and clove.
There is some heat from the 13.5% abv (alcohol by volume) and slight dryness in the after taste. This easy drinking Beaujolais should be served chilled for optimal enjoyment.

Made from grapes grown on Centenarian vines (at least 100 years of age), this is a delicious Grenache and a wonderful wine for matching with a huge array of foods.

The Vincent (named after the father of winemaker Marco Cirillo) is an elegant and delicate Grenache projecting red fruit flavours, mainly raspberry and red plum, with cinnamon and white pepper spices in the bachground.
The wine rests for 12 months in 90 year old foudre barrels before bottling. (A foudre is a large wooden vat.)

We recommended this wine earlier in the year and have returned to it again in December because this is a wine for all seasons and all occasions.
It is very competitively priced and if you can’t find the 2018 go for the 2019.

Notes
From the Loire Valley, Marc Bredif produces a wonderful, and hard to find, Vouvray (from Chenin Blanc) and this moreish (also hard to find) Chinon made from 100% Cabernet Franc.

This wine has a wonderful velvety mouth feel. Flavours of red fruit and dark cherries combine with some spices and a subtle glimse of pipe tobacco.
The wine is beautifully balanced and the after taste combines smooth tannins, fruit and well controlled acid.
